
A rollercoaster of emotions: as I got FRANCUCCI’S standard menu and the specials of the day, I felt so sorry, that I‘ve neglected this Italian Icon from 1962 for so long. Most Italian menus are utterly boring same same. This was so very creative and mouthwatering! OMG!
But my pleasure was below my high expectations!
One example: at the OSTERIA CENTRALE (see my review) we had WHITE ASPARAGUS WITH PARMA HAM. Heavenly: the asparagus shortly grilled with Parmesan, but still al dente – served with thinly sliced delicious cold Parma ham.
At FRANCUCCI I got the asparagus wrapped by the ham – as one hot bundle directly from the oven: all hot, all tasting the same – not the delicious dialog between hot & cold and between the two very different tastes of asparagus and Parma ham.
In Germany we have a say: „ Gut gedacht – ist nicht gut gemacht.“
