
THE CUISINE: A short list of very creatively ambitious dishes. They arrived in very artful presentations. But the taste disappointed me! Varying a recipe doesn’t guarantee a better or at least equal taste. An admitted visual elegance at the expense of the typical taste – is disappointing for me. When at a SALTIMBOCCA the flavors of the ham & sage are too shy – almost gone – then I can’t enjoy it.
THE SERVICE: The Maître was very friendly, professional & engaged. But I felt sorry for him since his four very young service assistants let him and the two handful of guests down – by talking more to and looking at each other than having their eyes and attention at their customers. I would accept if these youngsters are lacking years of experience, but at least they should demonstrate focus & commitment – especially in a Fine Dining Restaurant vs a neighborhood pizzeria.
THE AMBIANCE: Brand new, very elegant – so perfectly fitting to the fine dining concept. That I prefer a more warm & cozy atmosphere is my very own problem and no reason to criticize.
