“It’s a chain!” a famous drummer once exclaimed to me when I naively invited him to a chain restaurant in Los Angeles. And indeed: today I know that 99% of all chain restaurants are mediocre at best. But no rule is without exception: three Danes founded Stick’N’Sushi in Copenhagen years ago and then expanded it internationally – and have been able to maintain its top quality to this day. What happened to my botched invitation? Don’t worry. Today, Virgil Donati and I are friends.
